Native Potato Starch

Potato Starch Superior is a universal binder and thickener for many applications in the food sector as well as other industries. It can be used in a wide variety of human food applications, among which are:

The potato starch can be used in numerous gluten-free and grain-free pet food applications.

Native Potato Starch Characteristics

AKFP's Superior Potato Starch is processed from special varieties of European potatoes that yield a fairly high amount of quality starch.  It is manufactured in Germany by Emsland Group, the world's second largest potato starch manufacturing company.

Among the major industrially produced native starches, potato starch stands out with distinct characteristics that make it a choice ingredient in food manufacturing.  Potato starch has larger (oval, spherical) starch granules than the other major starches.  Native potato starch also has the highest viscosity among all the major native starches.  It reaches a peak viscosity of 3000 BU at 60o – 65oC.  It also exhibits the highest swelling power and solubility at 95oC compared to other native starches. 

The starch paste or solution from native potato is nearly clear, with very high viscosity and long texture.  It also has relatively medium rate of retrogradation  and medium-low resistance to shear.  The high viscosity of native potato starch indicates  a lower amount of potato starch is needed to obtain a paste with a given viscosity, compared with corn, wheat or tapioca starch.  The texture of potato starch can be further described as visco-elastic, cohesive and long-bodied.  The clarity of the potato starch paste can be considered as clear or translucent.  Films of potato starch products are observed to rate high in tensile strength, flexibility, solubility and gloss.

Potato starch has a neutral flavor profile.

 

Food Applications for Native Potato Starch

The high water binding capacity of potato starch, measured through its high viscosity, is very useful in snacks, meat and bakery products, powdered foods and whenever lower relative concentrations or dosage of starch is preferred.

The clarity of potato starch in solutions is an important feature for clear soups, gravies and glass noodles.

Its excellent gelling properties make potato starch a choice starch for meat products and noodles.

The low protein and fat/lipid content of potato starch has a positive influence on taste, odor and color making it a flexible ingredient in many food products, providing good organoleptic properties.

Our native potato starch is available in 25 kg (55.115 lbs) and 1,000 kg (2,204.6 lbs) totes.  The 25 kg bags are multi-layer kraft paper bags and packed 40 bags per pallet.  A single 1000 kg tote comprises one pallet.  The product is shipped in shrink-wrapped pallets.
