Choosing the Right Cassava Flour for Your Application
Cassava flour is not the same as tapioca starch. Tapioca starch is the extracted starch portion of the cassava root, so it works best as a thickener or binder. Cassava flour uses the whole root, which means it contributes more fiber, more body, and a texture closer to wheat in finished products. If your formulation needs structure rather than just binding, cassava flour is typically the better starting point.
Your choice of grade depends on your production method. A high-speed tortilla line, for example, needs a flour that can handle continuous mixing and sheeting without breaking down. King Lion Basic Cassava Flour
This is our foundational cassava flour grade. It works well in simple formulations where you need a clean, neutral base with consistent particle size. King Lion Multi-Purpose Cassava Flour
This grade offers broader functionality than the Basic flour and handles a wider range of production processes. Because of that versatility, it suits manufacturers who run several product types on one line without switching base ingredients. It also delivers consistent hydration and binding across different formulations, so you can standardize on a single flour without sacrificing performance.
Specialty Cassava Flour for Baking
We developed this grade specifically for gluten-free baking applications that demand better moisture retention and crumb structure. It holds moisture longer than standard grades, so breads and cakes maintain a softer texture through shelf life. It also promotes better rise in leavened products. As a result, bakers can achieve textures closer to wheat-based formulations without relying on extra gums or binders.

This grade handles the high shear and high temperatures of extrusion processing. King Lion Cassava Dough Blend
We formulated this blend specifically for high-volume tortilla and flatbread production. It combines cassava flour with complementary ingredients to produce a dough that sheets, presses, and bakes like wheat dough.
